Since 1994 at the Domaine de la Cour Signole in Lower Normandy the PREMIUM ZATHINOE CIDER is produced according to the original traditions of Normandy.
ZATHINOÉ cider is obtained exclusively from a dozen local varieties of cider apples belonging to the Sweet, Sweet Bitter, Bitter and Tart categories. These apples come from tall stem orchards planted on the best terroirs in the Livarot region, one of the six AOP Pays d’Auge demarcated areas. Thus, in addition to the IGP (Protected Geographical Indication). ZATHINOÉ has the Protected Designation of Origin “Pays d’Auge”. ZATHINOÉ quality is above all a clever blend of tradition and technology. The traditional production of cider is respected to ensure respect for the purity of the product, and ZATHINOÉ has successfully combined its technology to ensure manufacturing productivity. Before being marketed under the designation “Protected Designation of Origin Pays d’Auge” ZATHINOÉ is subjected to an analytical control by an approved laboratory followed by a taste examination ensured by an Approval Commission under the control of National Institute of Designations of Origin (INAO). The designation “A.O.P. Pays d’Auge “is a guarantee on the origin of ZATHINOÉ but also of compliance with strict specifications and original taste characteristics linked to the exclusive use of loyal and constant local uses.
